YEARENDER 2015 FEATURE PACKAGES
epa04990694 YEARENDER 2015 FEATURE PACKAGES..(09/13) Dingiri Banda, a 42-year-old Sri Lankan Kitul (Caryota urens) tapper, prepares to cook the Kitul sap locally called 'Telijja' into treacle and jaggery at his wattle and daub home near the UNESCO Biosphere Reserve and World Heritage Site Sinharaja rain forest in the remote hamlet of Nedaripitiya, 220 kms from Colombo, Sri Lanka, 30 June 2015. This being done in the home kitchen and over an open hearth, is a time consuming and tricky art of getting the sap cooked to the correct consistency for treacle and the solid for the jaggery used as a sweetener.
