Peru, Andes, Santa Rosa Camp, 24 August 2016..Choclo (Peruvian Corn) at Santa Rosa Camp in the Apurimac River canyon in their route from Chiquisca Camp (1,800m/5,900 ft) to Marampata Camp at the doors of Choquequirao ruins (3,000m/9,842 ft)...Choclo, also referred to as Peruvian corn or Cuzco corn (after the capital city of the Inca empire), is a large-kernel variety of field corn from the Andes. It is consumed in parts of Central America and South America, especially in Peru, Bolivia and Colombia. As field corn, it is not generally regarded, in industrialized societies, as desirable for human food without commercial pre-processing. When compared to sweet corn, the kernels are larger and chewier and have a starchy, hefty texture, rather than a sweet taste. The taste and appearance are somewhat similar to hominy. Choclo is used in the making of humitas in Bolivia, choclo arepas in Colombia and for pastel de choclo. Peruvian corn is often white in color. The word choclo derives from the Quechua word choccllo and has since taken on a broader context within the Spanish language, often being used to refer to cobs of corn in general. In Peru, choclo is commonly served as an accompaniment to dishes such as ceviche, and its toasted, salted form, similar to corn nuts, are customarily given free to restaurant patrons upon being seated. Full ears of choclo are also a popular street food in Peru and other Andean countries, typically served with a slice of cheese as choclo con queso. Peru, Andes, Machu Picchu, 31 August 2016..The Temple of the Condor in Machu Picchu is a breathtaking example of Inca stonemasonry. A natural rock formation began to take shape millions of years ago and the Inca skillfully shaped the rock into the outspread wings of a condor in flight.. On the floor of the temple is a rock carved in the shape of the condor's head and neck feathers, completing the figure of a three-dimensional bird. Historians speculate that the head of the condor was used as a sacrificial altar. Under the temple is a small cave that contained a mummy. A prison complex stands directly behind the temple, and is comprised of human-sized niches and an underground maze of dungeons. According to historical chronicles that documented similar Inca prison sites, an accused citizen would be shackled into the niches for up to 3 days to await the deliberation of his fate. He could be put to death for such sins as laziness, lust, or theft..Machu Picchu is a 15th-century Inca citadel situated on a mountain ridge 2,430 metres (7,970 ft) above sea level. It is located in the Cusco Region, Urubamba Province, Machupicchu District in Peru, above the Sacred Valley, which is 80 kilometres (50 mi) northwest of Cuzco and through which the Urubamba River flows. Most archaeologists believe that Machu Picchu was built as an estate for the Inca emperor Pachacuti (1438–1472). It is the most familiar icon of Inca civilization. The Incas built the estate around 1450 but abandoned it a century later at the time of the Spanish Conquest. Although known locally, it was not known to the Spanish during the colonial period and remained unknown to the outside world until American historian Hiram Bingham brought it to international attention in 1911. Machu Picchu was declared a Peruvian Historical Sanctuary in 1981 and a UNESCO World Heritage Site in 1983.
